If you aren’t familiar with the radish spirit, you should definitely make a batch of these and watch Spirited Away while you sup.
I’m not sure why it’s so easy to love the radish spirit. Maybe because we’ve all had times when when we’ve been frightened & overwhelmed & in really weird circumstances & we’ve wished for a large munificent tuber god (or something similar) to come and help us out. And when things are really weird you know that anything that is going to help you will probably have to be pretty unusual, too.
Eccentric and benevolent. That’s the spirit of the radish spirit.
And the Autoimmune Protocol or the WahlsPaleo+ too, for that matter.
These Daikon Salmon cakes will help you invoke the benevolent eccentricity of the radish spirit for just such weird & overwhelming times…
(Plus, Daikon radish counts as a sulfur-rich food for Wahls Paleo Plus.)
Daikon Cilantro Salmon Cakes (AIP & WahlsPaleo+)
- 1/3 cup coconut butter
- 1 tin sockeye salmon (or 3-4oz leftover salmon)
- 1 cup grated daikon
- ½ cup cilantro
- ¼ cup chopped red onion
- ¼ cup blueberries
- 1 teaspoon Himalayan salt (omit if the salmon is salted)
- 1 teaspoon sea vegetable flakes
- 2 Tablespoons coconut oil
Preheat oven to 300.
Put the coconut butter in an oven proof dish & place it in the oven for 10 minutes until softened.
Combine the remaining ingredients, except the coconut oil, in an oven-proof bowl and add the warm coconut butter.
Stir until the salmon cilantro mixture is coated with coconut butter and return the bowl to the still warm (heat turned off) oven for a spell. Just long enough to warm up the coconut butter again to assist in forming the cakes.
Melt the coconut oil in a large frying pan on medium-low heat. Make 5 patties with the warm salmon mixture with your hands and slide them onto the hot pan. Flip carefully when browned (after about 10 minutes) and brown the 2nd side.
These are slightly fragile cakes and require care in flipping. If they crumble a bit, just push them back together.
Great hot or cold.

Deglaze the salmon cake pan with bone broth & add spinach to make a quick soup. Add a small avocado and a piece of blue-raspberry fudge. Like so:
